One of the new features of iOS 14 is the ability to change your default mail and browser apps to a third-party option. A bug in iOS 14 reset your chosen default apps whenever you restarted your phone, but Apple fixed that bug with the update to iOS 14.0.1. Now another issue has been discovered.
Any time that you update your default third-party mail or browser app, iOS 14 will reset your default app settings (via The Verge). So this means if you set Gmail as your default email app and then you update the Gmail app to a new version, your default mail app will be reset to Apple's Mail app.
You can see this bug demonstrated in the video below from David Clarke. This bug is also present in the iOS 14.1 update that was released yesterday.

This bug could get pretty annoying because any time that your default email or browser app gets an update, you have to dig back into your iPhone or iPad's settings and change your default app back again. And it could be made even worse if you've got automatic app updates enabled your default app is updated in the background, resetting your defaults without you knowing.
Apple hasn't issued a statement on this bug. It's in the process of beta testing iOS 14.2, so it's possible that Apple could add in a fix for this bug before iOS 14.2 is released to the public.
