It's expected that Samsung will update the Galaxy S8 with Android 8.0 Oreo at some point, but little about the update is known. That's changing today with news that some folks are receiving a beta Oreo update.
Several Reddit users have received an Android 8.0 Oreo beta update on their Galaxy S8 and S8+ phones. For now it looks like there's no official way to enroll in the beta, with some folks just being lucky enough to get the update pushed to them.
As for what's included, the 1.4GB update brings Android 8.0 and Samsung Experience 9.0. The beta update adds a ton of new features, including app shortcuts, notification badges, improvements to Edge Screen, better speed and security for Samsung Pay, a GIF keyboard on the Samsung Keyboard, and more.

There's no word on when Samsung might release Android 8.0 to all Galaxy S8 and S8+ models, but the fact that it's starting to seed the Oreo beta to regular users is a good sign that the update is making progress.
